I took Ginny out in the jogger stroller today. We dropped off Laura and school and ran about a 4 mile loop. I love being outside, it is so beautiful right now.
I tried a new meatless dish last night and it turned out great! Here is the recipe:
Black Beans and Rice
1 teaspoon oil
1 chopped onion
2 cloves garlic
3/4 cup white rice, uncooked
2 teaspoons cumin
1/2 teaspoon pepper
2 can black beans, rinsed
1/2 cup corn
1 chopped tomato
1 Tablespoon lime juice
2 Tablespoons green chilies
1 teaspoon salt
1 1/2 cups chicken stock
Saute onion in oil then add garlic. Pour in chicken stock and the rice. Bring to a boil and then lower heat and cover. Simmer for 20 minutes. Then add all the rest of the ingredients. I added a little more chicken stock because it looked dry. Cook until tomato and corn are ready. I also added a little more salt. It made a great burrito filling but some people just ate it plain. We will be adding this to our menu. Yum!
Hi. That sounds yummy. I have been sick the last few days so I have run 1 1/2 miles two days ago. But I think teaching a preschool class for 2 1/2 counts as exercise too.
